What Are the Main Types of Steak?

They walk it out to you, and there are glorious cuts of meat on a platter. All these cuts of steak are carved in front of you, and you have no idea what to choose.

Ribeye Steak

Ribeye steak is one of them. It is derived from the rib section and is full of flavor and juicy due to its higher fat content.

It is considered one of the most flavorful types of steak cuts as it is well-marbled with an abundance of fat. Most chefs would recommend cooking ribeye steak medium rare in order to bring out the flavor and keep the steak juicy. 

Strip Steak

Strip steak, also known as a New York strip, Kansas City strip, or a sirloin club steak, is a delicious and tender cut of beef that is taken from the short loin section of a cow. It is usually served over high heat, cooked medium-rare to medium, or prepared with a marinade of garlic and fresh herbs before grilling. It also pairs well with herbs, spices, and sauces that can bring out the natural richness and depth of the beef’s flavor. 

Filet Mignon

Filet mignon is the tenderest and most expensive cut, taken from the small end of the beef tenderloin just in front of the sirloin. It has a fine texture and is juicy and mild in flavor, with a buttery finish. When cooked properly, it is tender and succulent. Filet mignon is usually cut into thick slices about 1 1/2 inches thick and pan-seared, baked, broiled, or grilled.

Porterhouse Steak

It is cut from the rear end of the short loin and is usually one of the most tender and flavorful cuts of grilling steak per pound. It contains both the tenderloin and a large piece of the top loin, with a distinct T-shaped bone running through the center of the meat.

It has a larger surface area, making it more flavorful because of the added fat that brings out the steak’s unique flavor profile. Porterhouse offers more flavor, especially if it has the best steak seasoning.

Hanger Steak

Hanger steak is one of the better-known cuts. It is a flavorful and boneless cut of beef that comes from the plate near the diaphragm of the cow.

The cut is quite thick and can sometimes be loose and tender, depending on the age and the type of cooking used. It has a great beefy flavor and can be either grilled, pan-seared, or served as a pot roast.
